I saw this on Facebook the other day and decided to give it a try last night. It was delish AND easy! Even the kids liked it!
Chimichangas are normally deep fried (which packs on the calories and fat), but these are baked so they are a bit healthier. My hubby is a vegetarian so we substituted black beans for the chicken. We also substituted whole wheat tortillas for the flour tortillas in the recipe. And, instead of using pepper jack cheese and taco seasoning, I just bought an 8 oz. bag of shredded "taco cheese". Worked out perfectly!

Baked Chicken Chimichangas
8 oz pkg. cream cheese (softened)
8 oz. Pepperjack cheese, shredded
1 1/2 Tbsp. taco seasoning
1 lb. cooked chicken, shredded
8 flour tortillas
cooking spray
shredded cheddar cheese
green onions, for garnish
sour cream
salsa
Stir together cream cheese, Pepperjack cheese and taco seasoning.
Fold in chicken.
Divide among flour tortillas.
Tuck in sides, and roll up each tortilla.
Lay seam side down in a sprayed 9x13" baking dish.
Spray tops of tortillas with cooking spray.
Bake at 350 for 15 minutes.
Turn chimi's over, and bake an additional 15 minutes.
Serve with cheddar cheese, green onions, sour cream, and salsa.
